I have so many recipes I want to share this week, but I think I'll have to stick with this one. It turned out so good, and even my husband (who hates cake btw) loved it. Don't forget to visit The Pumpkin Patch for more great Tasty Thursday recipes.
Lemon Cake
2 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 stick (4 ounces) unsalted butter, at room temperature
2 cups sugar
1 cup plain whole-milk yogurt
3 large eggs, lightly beaten
1 tablespoon finely grated lemon zest
1 tablespoon fresh lemon juice
1/2 teaspoon vanilla
Confectioners’ sugar, for dusting
Preheat the oven to 350° F. Butter and flour a 9-inch-square cake pan. In a bowl, whisk the flour with the baking soda and salt. In a bowl, beat the butter with the sugar until smooth. Beat in the yogurt, followed by the eggs, lemon zest, lemon juice and vanilla. Gradually beat in the dry ingredients until blended.

This sounds yummy. Is it good and moist? I'm trying to add 1 dessert a week to our menu, but I don't want heavy stuff, so this sounds like it would be a good one!
It turned out something like a pound cake texture, so it's a little on the "heavier" side, but it's so good it doesn't matter. The flavor is just enough to be there but not overpowering, and it doesn't leave a horrid aftertaste like some I've tried. It is well worth making.
