Sure, it's really easy. Peel, core and slice 6-8 medium Golden Delicious apples to 1/4 inch thick. Heat 3 tablespoons butter over high heat until sizzling and fragrant, toss apples with butter, reduce heat to medium, cover, and cook about 5 minutes, stirring frequently. Add 3/4 cup sugar, 1/8 teaspoon salt and 1 teaspoon cinnamon, turn heat to high and cook 3 minutes or until the juices are thick and syrupy. Let cool on a baking sheet. Line pie plate with bottom crust, pour in filling, top with top crust, flute edges, cut slits for vents, and bake at 425F for 40-50 minutes in the lower third of the oven, or until the crust is richly browned and the filling starts to bubble.
This is my condensed version from the Joy of Cooking cookbook. It's the easiest and best recipe I've used for apple pie, and I rarely use anything else with apples. I'm going to make another one today with more apples though, since my new pie plate seems to be bigger than my old one, so it seems to need a little more apples to make it stand up higher. Then I can take more pretty pictures :)
